Coffee-to-Water Ratio: The Simple Formula for Better Coffee
Most home brewers, when their cup tastes off, reach the same conclusion: the beans must be bad. They switch roasters, try a different origin, order something new. The cup still tastes wrong.
The beans are rarely the problem. In the vast majority of cases, the variable that is actually off is the coffee-to-water ratio β how much coffee you are using relative to how much water. Get this number right and a good coffee becomes a great one. Get it wrong and even a well-sourced, freshly roasted single origin will taste flat, bitter, or watery.

What Is the Coffee-to-Water Ratio?
The ratio describes the relationship between the mass of dry coffee grounds and the mass of water used to brew them. It is expressed as 1:X, where 1 is one part coffee and X is the number of parts water.
For most filter brewing methods β V60, French press, AeroPress, drip β the accepted starting range is 1:15 to 1:17. This means:
- 1:15 β 1 gram of coffee for every 15 grams of water. Produces a fuller, bolder cup.
- 1:16 β the standard middle point. A good starting ratio for most filter coffees.
- 1:17 β 1 gram of coffee for every 17 grams of water. Produces a lighter, more delicate cup.
In practical terms, if you are brewing a single cup of 250 ml (approximately 250 g of water), a 1:16 ratio means you need roughly 15β16 g of coffee. That is about two level tablespoons of ground coffee β though measuring by tablespoon is imprecise, which we will cover shortly.
The ratio is measured in grams, not millilitres or spoons. Water weighs approximately 1 g per ml at brewing temperature, so a kitchen scale reading of 250 g of water is close enough to 250 ml for this purpose.
Espresso: Why the Ratio Is Different
Espresso operates on a completely different ratio to filter coffee. The standard espresso ratio is 1:2 β that is, 1 gram of coffee in for every 2 grams of liquid espresso out.

Why so concentrated? Espresso uses pressure rather than gravity or time to push hot water through a dense puck of finely ground coffee. The result is a small, concentrated shot with a higher dissolved solids content than any filter method. The 1:2 ratio is not arbitrary β it is the range where espresso achieves its characteristic body and crema without tipping into over-extraction.
Some espresso styles use a shorter ratio (1:1.5 to 1:2, called a ristretto) or a longer one (1:2.5 to 1:3, called a lungo). For a beginner, 1:2 is the right place to start before experimenting. Understanding dialling in your espresso will help you refine from there.
Ratios by Brew Method
Each brewing method has a different contact time, water temperature, and extraction dynamic. The table below gives the standard ratio and gram measurements for a single standard cup (approximately 250 ml output). These are starting points β adjust to taste.

The Moka pot is the exception. It does not follow a traditional variable ratio β the basket size determines how much coffee you use, and the lower chamber is filled to just below the safety valve. What Happens When the Ratio Is Wrong
The ratio has a direct and predictable effect on flavour. Understanding this makes it much easier to troubleshoot a bad cup.
Too much coffee (ratio too low, e.g. 1:10 or 1:12)
When you use too much coffee relative to water, the brew becomes over-concentrated. The result is typically:
- Heavy, dense mouthfeel
- Bitterness that lingers on the back of the palate
- Flavour that tastes muddy or flat rather than complex
This is often confused with over-extraction β where the water has pulled too many compounds out of the grounds. Both produce bitterness, but they are different problems with different fixes. Too little coffee (ratio too high, e.g. 1:20 or 1:22)
When you use too little coffee, there is not enough soluble material to produce a balanced brew. The result is typically:
- Thin, watery body
- Sour or acidic taste (under-extracted acids dominate when there is not enough structure)
- Flat finish with no sweetness or body
Many people who describe their home coffee as "tasting sour" are not using a wrong grind size β they are simply using too little coffee. The fix is straightforward: increase your dose by 1β2 g and taste again.
How to Measure Without a Scale
A digital kitchen scale is the most reliable way to measure coffee and water. A scale that reads to 0.1 g costs very little and removes almost all guesswork. If you are serious about consistently good coffee, it is worth the investment.
If you do not have a scale, here are practical workarounds:
- Use a standard coffee scoop. A level scoop of ground coffee weighs approximately 7β8 g depending on grind size and density. Two level scoops is roughly 14β16 g β close to a 1:16 ratio for a 250 ml cup.
- Use a tablespoon. One level tablespoon of ground coffee is approximately 5β7 g. For a 250 ml cup, 2.5 tablespoons gets you close to a 1:15 ratio. This method is affected significantly by how finely the coffee is ground β a finer grind packs more into the spoon.
- Mark your measuring jug. Once you know your preferred cup size in ml, mark it on a glass or jug. Consistent water volume means you only need to vary the coffee dose to adjust strength.
The limitation of all volumetric measures is density. Different coffees β and the same coffee ground at different settings β have different densities. A tablespoon of a very light, coarsely ground filter coffee weighs noticeably less than a tablespoon of a dense, finely ground espresso. A scale removes this variable entirely.
These same principles apply whether you are preparing a hot brew or an iced coffee at home β though for iced drinks, you will typically brew at a higher concentration (around 1:12 to 1:13) to account for dilution from ice.
Does the Ratio Change for Indonesian Single Origin vs Blends?
The standard ratios above work well as starting points for almost any coffee. However, there are subtle differences worth knowing when you are working with specific origins or roast profiles.
Darker, bolder coffees β including some Indonesian single origins roasted to a medium-dark level β are denser and more soluble than lighter roasts. This means they extract more quickly and can taste heavy or bitter at the standard 1:15 ratio. Starting slightly longer, at 1:16 or 1:17, often produces a cleaner result.
Lighter, more delicate coffees β such as a honey-processed Gayo or a washed Flores Bajawa with pronounced fruit notes β benefit from the denser end of the range (1:15) to ensure the brew has enough body to carry those flavours. Brewing too light can wash out the complexity you are paying for.

Most people who drink mediocre home coffee are not using bad beans β they are using an uncalibrated ratio.
Start at 1:15 or 1:16 for filter, and 18 g in with 36 g out for espresso. From that baseline, adjust in 1 g increments and taste the result.
