How to Dial In a Blend: A Step-by-Step Guide for Home Baristas
Why Dialling In a Blend Is Different
If you have already worked through the process of dialling in a single origin espresso, you have a solid foundation. But blends present a different challenge.
A single origin coffee is one voice. A blend is a conversation between two or more origins, each with its own density, processing method, and extraction rate. When you pull a shot from a blend, you are not extracting one coffee evenly — you are coaxing multiple coffees toward a single balanced result at the same time.
This means the margin for error is narrower, the variables interact with each other, and locking in a recipe requires a more deliberate approach.
The reward is consistency. A well-formulated blend, once dialled in, delivers the same character shot after shot — that structured sweetness, body, and finish that single origins rarely maintain across multiple batches.
Here is how to get there.
Step 1: Start With the Roaster's Recommended Recipe
Before adjusting anything, use the recipe your roaster provides. For Ariga Coffee blends, this information can be requested and we would be happy to assist. Treat it as your calibrated starting point, not a suggestion.
A standard espresso blend recipe will specify:
- Dose — the amount of ground coffee in the portafilter (typically 18–20g)
- Yield — the total liquid weight in the cup (typically 36–44g for a blend, depending on body target)
- Time — total extraction time (typically 25–30 seconds)
Pull your first few shots exactly to spec. Do not adjust yet. Your job in this stage is to observe, not correct.
Step 2: Assess the Shot — What You Are Tasting For
Blends are evaluated differently from single origins. You are not looking for the high clarity of a bright Ethiopian natural or the sharp fruit of a washed Gayo. You are looking for three things working together:
Balance — no single flavour dominates. Acidity, sweetness, and bitterness should form one coherent profile.
Sweetness — a well-extracted blend should have perceptible sweetness in the mid-palate. If it reads as flat or hollow, extraction may be low.
Body — blends are typically built to deliver texture and weight. A thin, watery mouthfeel suggests the shot ran too fast or the dose was low.
Take notes. If the shot tastes muddy and astringent, extraction is running high. If it is sour, sharp, or thin, it is running low.
Step 3: Adjust Grind First, Then Dose, Then Yield
Work through variables in this order. Changing everything at once makes it impossible to identify what is driving the result.
Grind first. This is your primary lever. Finer = slower flow = more extraction. Coarser = faster flow = less extraction. Make one grind adjustment at a time and pull a shot before making another.
Dose second. Increasing dose by 0.5–1g adds resistance and weight. Decreasing it opens the puck and speeds extraction. Once your grind is in a reasonable range, fine-tune with dose.
Yield last. Adjusting the yield (how much liquid you allow into the cup) affects concentration without changing extraction time significantly. A longer yield (more water through the puck) produces a less concentrated, sometimes brighter result. A shorter yield produces a denser, more body-forward shot.
Make small, deliberate changes. One variable at a time.
Step 4: Understand How Blend Components Extract Differently
This is the step that separates dialling in a blend from dialling in a single origin — and it is the most important one to understand.
In a blend, individual origin components do not extract at the same rate. A denser, washed coffee from Java may extract more slowly than a honey-processed Flores Bajawa or a naturally processed Mandailing. When these origins are ground to the same particle size and pulled at the same pressure and temperature, they will extract to different degrees within the same shot.
What this means in practice:
- If your shot tastes simultaneously over-extracted (bitter, dry) and under-extracted (thin, sour), you are likely seeing the effect of components extracting at different rates. You cannot fix this purely with grind adjustment.
- The roaster has already accounted for this in the blend ratio — this is why staying close to the recommended recipe matters more for a blend than for a single origin.
- Small grind adjustments have a compounding effect on a blend. A 1-click change that would barely move the needle on a single origin can shift the balance between components noticeably.
Your goal is to find the extraction window where the blend tastes unified — not where every component tastes perfect in isolation, but where they resolve into one coherent cup.
Step 5: Lock In Your Recipe and Repeat Consistently
Once you have a shot that consistently delivers balance, sweetness, and body across three or four pulls in a row, record your recipe precisely:
- Dose (to 0.1g)
- Yield (to 0.1g)
- Extraction time (in seconds)
- Grind setting on your grinder (by number or by reference mark)
- Water temperature (if adjustable)
Write it down. Use the same scale, the same tamping pressure, the same distribution technique every time. Blends reward repeatability. The more variables you hold constant, the more reliably you will reproduce the result.
Do not adjust your recipe again until your next bag of coffee or a fresh roast batch arrives — at which point a minor recalibration may be needed.
A Note on Freshness and Resting Time
Resting matters for all espresso, but it matters more for blends.
When coffee is roasted, CO2 is produced and trapped inside the bean. This gas releases over the days following roasting — a process called degassing. With a single origin, you are managing the off-gassing of one coffee. With a blend, you are managing the off-gassing of multiple coffees, each releasing CO2 at a slightly different rate depending on roast level, processing method, and bean density.
If you pull shots from a blend too soon after roasting, excess CO2 causes uneven extraction, channelling, and an over-aerated, hollow flavour. If you pull too late, the coffee has staled and the blend's sweetness and body flatten out.
